Last year, I wrote this blog post about Pizza Pronto, the small but perfectly formed pizza take-away that had recently opened in Penarth to rave reviews.

Less than a year on, and i’m pleased to see that these guys are doing great – branching out of Penarth and into pop-up rooftop cinema dates, and most recently, taking a spot at my favourite street-food venue, The DEPOT.

I was lucky enough to climb over the scaffolding of their shiny new pop-up last night and get my hands dirty, rustling up one of their specials – the delicious Fig & Balsamic glaze pizza (£4.50).

Life on ‘the other side’ of the counter…

It was great to experience being ‘on the other side’ of the street found counter for a while, and get a feeling for what it takes to run a successful pop-up. I spend so much time eating in, and writing about these kinds of places, but this was my first time ‘behind the scenes’ and it was clear to see what makes Kev and the Pizza Pronto team successful.

The attention to detail was spot on – from the perfectly measured out dough balls ready for each pizza, to the cool, industrial style pop-up structure they’d built, complete with hession sacking to cover the counter-top; there was even a vintage till for taking people’s payments – much better than stuffing notes and coins into an ice-cream tub!

This summer, there a plans afoot for plenty more pop-ups from the Pizza Pronto boys, as well as a load of new menu items including an absolutely delicious sounding Pear & Brie recipe.

    I met Kev and Nick there at the weekend too. They’re good lads and their pizzas were superb too.

    I too had the Fig & Balsamic option on that delicious bread base and sweet tomato sauce. I let them make it though.

    Later in the evening I took some ribs from the lads at Grillstock and we stripped it from the bone and added it to a pizza; true Streetfood-style collaboration at its finest.
